This dish is one that we are having a lot for lunch lately as it’s very nutritious and easy to make: Chard with white beans on mashed potatoes. For it to be prepared super quickly (lunch breaks go buy so fast, right?) we use instant mashed potatoes. But of course you can make the mashed potatoes from scratch too! If you can, don’t leave out the vegan cheese (or use regular for a vegetarian option), it really completes the dish.
Serves 2
1 bunch chard 1 clove of garlic 1 tbsp olive oil 1 can of white beans (15oz) ⅔ cups vegetable broth 1 handful of vegan grated cheese salt & pepper juice of ½ lemon serve with: mashed potatoes
Cut the chard into strips, peel and press the garlic clove, strain and wash the beans. Heat the olive oil in a pan and add the chard. Sauté briefly over medium heat. Add garlic and sauté briefly. Deglaze with vegetable broth and saute chard with the lid on until tender. Add beans and mix in, stir in cheese and season with salt, pepper and lemon juice. Serve on mashed potatoes.
