Eton Mess is one of our favourite desserts and it might be yours too as soon as you try it! It's a traditional English dessert made with strawberries, whipped cream and crumbled meringue. It's a perfect combination, and we've developed a plant-based version for all the vegans out there. Just use vegan whipped cream and our vegan meringues.
For this year's strawberry season we partnered with fran's future kitchen who created a delicious strawberry risotto. You can find her recipe here.
Serves 4
2 cups strawberries
1 cup (vegan) cream
12 small meringues (store-bought vegetarian meringues or use our recipe for vegan meringues)
1 tbsp vanilla sugar (optional)
Wash the strawberries and cut into pieces or slices. Mix with the vanilla sugar (if using) and mash about half with a fork or puree with a (hand) blender. Whip the cream until stiff. Break the meringue into pieces. Alternately layer meringue with whipped cream, strawberry sauce and the strawberries into glasses. Decorate with a few strawberries and meringue crumbs and serve immediately. Enjoy!
