GRAPE JELLY

We had the opportunity to visit our friend's garden and take as many grapes from their grapevines as we wanted. Our friends had so many, they just didn’t know what to do with them. We ended up with about 5kg of grapes and turned them all into jelly. And now we have so many jars of jelly, we (almost) don’t know what to do with them…



For 4 large or 6 small jars


35 oz grapes, white or red 2 ½ cups gelling sugar (2:1, vegan)


Wash the grapes and remove the stems. Place in a large and tall pot and bring to the boil over medium heat, stirring. Simmer gently for 5-10 minutes until the grapes break down. Place a sieve or (better) a food mill on a large bowl and mash and sieve the cooked grapes. We don't mind if small pieces of the skin remain in the mixture. If you do though, you can sieve the mixture again. Wash out the pot, pour in the grape mixture, add the gelling sugar and combine. Bring to the boil over medium heat and boil for 4 minutes at a bubbling boil. Pour the hot jelly into clean jars, close tightly and let cool. Once opened, store the jelly in the refrigerator.
