OVERNIGHT OATS

Busy mornings are something that we always find particularly difficult after the holidays. Where there were extensive breakfasts for days, things have to move quickly again. In come our Overnight Oats, which make breakfast super easy. Preparing them takes five minutes the night before and another five minutes in the morning. And if you put them in mason jars, they are perfect to eat on the go or at work.



For 2


1 cup rolled oats (or other cereals) 2 tbsp chia seeds 2 tbsp flaxseed, coarsely ground 1 tbsp hemp seeds ¾ cup + 3 tbsp plant milk 3 tbsp (vegan) yogurt 1 apple, grated


1 large handful of (frozen) blueberries (or other berries, optional)


Fruit, berries and nuts in season as topping


Mix oats and seeds in a bowl with milk, yogurt and grated apple. Divide between two jars or small bowls and refrigerate overnight. The next morning, warm blueberries in a small saucepan over medium heat and pour over oatmeal mixture. Top with seasonal fruit, berries and nuts and enjoy.
