RISOTTO MIX IN A JAR

Makes 1 jar (14 oz)


1 ¼ cups risotto rice

½ cup sun dried tomatoes (not the ones in oil)

⅛ cup dried porcini mushrooms

1 tsp dried rosemary

1 tsp dried thyme

1 tsp dried marjoram

½-1 tsp dried grated lemon peel

1 bay leaf

Cut the dried tomatoes into small pieces. Break or cut the porcini mushrooms into small pieces. Put both in a bowl and mix well with rosemary, thyme, marjoram, lemon zest and risotto rice. Fill into a sterilized jar, add the bay leaf and seal airtight.

QUICK TOMATO RISOTTO


Serves 2


1 risotto mix in a jar

1 small onion

2 tbsp olive oil

½ cup white wine

4 ¼ cups mild soup

1 handful of grated (vegan) cheese (optional)


Chop the onion into small cubes. Heat the olive oil in a pan or pot over medium heat and sauté the onion until translucent. Add the risotto mix and sauté briefly. Deglaze with white wine. When the wine has boiled away, pour in hot soup until the rice is just covered. Simmer gently, stirring, and pour again when the soup has boiled away. Repeat until rice is cooked but still has a little bite. Optionally, stir in the cheese. Remove the finished risotto from the heat and let rest for two minutes, then serve. Enjoy!
